Temporarily Out of Office

Hi Everyone! Mitchell and I have been getting a lot of questions about our blog address for our upcoming adventure so we thought we would get the link out there before we head home for the holidays.
Some of you may have no idea what we are doing and why, so let me review the events leading to our temporary 'retirement.'
Mitch and I moved up to Prince George two years ago to start our careers as Physiotherapists; many friends and even family asked 'why?' and at that point the answer was very simple: student loans. Oy vey. We put our heads down, worked hard, and guess what... met amazing people and actually really enjoyed our time.
[Now you may be asking what does this have to do with that gibberish you posted at the top? Ok let me try and get on with this; there is a purpose to my rambling].
Our focus changed a few times throughout the two years and at one point we had our heart set on saving for our own home and that beautiful Golden Retriever I have always wanted...That was until I overheard a conversation of a friend asking a coworker if they had any plans to travel. Their answer was a quick "No! How could we do that? We have the house and the dogs, and work, and...." That night I went home and told Mitch "that's it, I need to travel. Do you think we could go somewhere for a month?" To which Mitch responded "how about 6?!"
So here we are, coming into our last week of work in Prince George before we head home to spend some time with family before we head off on January 14th. Our very rough itinerary is as follows:
Vancouver to Melbourne, Australia, with a layover in Tokyo, Japan --> We will be renting a Toyota HiAce Poptop van and heading out on a very sweaty adventure starting with a drive down the Great Ocean Road and then back up the east coast to Brisbane (Total of 6 weeks).
Brisbane-->Bangkok, Thailand--> Chang Mai--> Laos --> Vietnam --> Cambodia --> Southern Thailand (Total 2.5 months)
Thailand --> Athens, Greece -->Budapest, Hungary --> Croatia -->?Northern Italy--> ?Germany -->United Kingdom --> Ireland (Both mine and Mitchell's mom will be meeting us in Dublin on June 14) (Total ~6 weeks)

There you have it. We will both do our best to update as much as we can. Our preparation is coming along nicely and the excitement/anxiety is high. Before I sign off, I will put a few questions forward to you all:
1. What are the chances that I will run into a snake in Aus? I have been having nightmares about this.
2. How does a girl pack for 6 months in one backpack??
3. Any celiacs have tips for eating abroad (esp. Asia)?
4. Anyone want to meet up anywhere?!
